Weekend Activities + Weekly Goals (Part 10)

We are fast approaching the middle of August which means the CNE is starting up and summer is winding down.  This summer as a family of 4 and mom of 2 has been probably the best one yet.  Although I can’t believe I’ve probably only had a handful of cocktails (#NormalizeBreastFeeding)

I know I am a week late with my weekend wrap up but honestly never late then never.  Because let’s be real here – when I do these types of posts, it’s mainly for myself (or my future self I should say)

And I think it goes without saying, I like to document things.  So without further ado, here is a quick recap of our Civic long weekend :)

Friday evening we braved the long weekend crowd and had dinner at our go-to family date night restaurant.  It’s always a little hairy because by the time we get there it’s the start of bed time routine.  Buuuutt we do it anyway, mostly because the Hubz and I are completed clueless about dinner by fridays (that’s a lie, we have the “what should we have for dinner” convo at least 5 times a day) and the change in scenery is a must for all of us.

Saturday, we had lunch with my in laws.  We went to a steak place, but thankfully I was able to find a veggie option that tasted pretty good!

Sunday we met my family for lunch at my sisters.  Followed by some fun in the sun at a local park.

Monday, we hung out with friends.  Pretty chill afternoon hanging out in the backyard with all of kids running around us lol.

Greek inspired lentil salad

I am Indian, a desi, a first generation Indo-Canadian and I very rarely cook daal.

Why?

I just find indian food to be very mushy or overcooked.  Well some of it I love: Saag or Panner but all my life, I’ve always loved salad (I can see everything, it’s crunchy and healthy obvi :P) so eating indian food that has been cooked to an oblivion isn’t really appetizing to me.

But, I had no idea that the base of a salad could be something other than lettuce, kale or spinach.  I mean I’ve made quinoa salads but never a daal based salad.

Until I found this recipe.

What you need:

Lentils:

  • 2 cups of brown green lentils
  • 2 Bay Leaves
  • 2 Cloves of Garlic

Dressing:

  • 1/2 tsp Salt
  • 1/2 tsp whole mustard seeds
  • 6 tbls olive oil
  • 2 tbls vinegar (I didn’t have cherry so I used white)
  • Pepper to taste

Everything else:

  • Cucumber
  • Avocado
  • Olives
  • Soft cheese to top (I used feta)

What you’ll do:

  1. Cook the lentils by first rinsing them a few times in cold water, then adding them to a pot with the garlic and bay leaves and filling the pot with water 2 inches over the lentils.  Let the lentils boil on high heat for 20 minutes and then on medium-low for another 15 minutes until they are tender.  Remove from heat, remove bay leaves and garlic and strain.  Place lentils in the fridge to cool
  2. Add the salt, mustard seeds, olive oil and vinegar to a bowl and whisk until the mix emulsifies
  3. Chop up the cucumber, Avo and slice the olives and cheese as required.
  4. Mix everything (except the cheese) until everything is fully coated in the dressing.
  5. Plate your salad and top with cheese.  Serve as a side or as a main :)

Weekend Activities + Weekly Goals (Part 7)

We had an awesome weekend.  The weather was superb and the blazing heat was welcomed because we experienced such an overcast and gloomy spring.

Friday we had wings at home and then packed up the car to get ready for the next day.  We spent the better part of the day at the beach we were pleasantly surprised as to how much Miss S enjoyed herself but were perplexed as to why Miss El seemed so confused the entire time we were there.  We later realized it was because we were all wearing sunglasses (and maybe she couldn’t recognize us lol).

Sunday we were at a birthday party.  Backyard bouncy castle, Pizza with chip toppings and lots of kids of course.

The workweek was actually spent running sooo many errands.  From doing groceries, to gift shopping, to getting last minute stuff for the day at the beach as well as planning for Miss S’ 3rd birthday.

Also I’d just like to add (so my future self can remember) that even with this list of weekly goals and regular maternity leave tasks, I still accomplish and complete many other to-do items to run and mange the house like: clean the floors, prep dinner, make lunches, do preschool drop off/pick up, general tidying, multiple loads of laundry, pay bills, claim receipts etc etc in any case here is how I did with my goals last week.

  1. Read another chapter of the book I am reading (sadly no, I am struggling to find the right time to read – holding a book while nursing isn’t very comfortable)
  2. Bread this week? Bread this week! (nope, and I realized i can’t commit to this goal until after June)
  3. Take some more everyday photography shots and move photos from SD Card yep, see this post
  4. Get my 10K steps 5/7 days next week & Work out 4/7 times DONE
  5. Take Miss El to the Born to Read library program (weather did not permit, and parking this until the end of June)
  6. Figure out a layout for our 2015 photo album Yep and started
  7. Update family room painting from black on white to white on black
  8. Thursday Meditation
  9. Put away all clean laundry
  10. Order Miss S birthday Cake (we talked to the bakery and got the details and will be happening tomorrow)

Ok 5 out of 10 this past week.  The next couple of days are all about Miss S birthday!

  1. Read a chapter
  2. Take some everyday/creative photography
  3. Get my 10K steps in 5/7 days and workout 4/7 days
  4. Tuesday Self Care: Mediate, Bath and Yoga
  5. Put away clean laundry
  6. Order birthday cake
  7. Finalize day of party plan + list of things to bring
  8. Join Miss S’ Preschool bday party
  9. Find family pictures from last 3 years
  10. Send pix to friends

Parchment Paper Dinner

Slow cooker, weekend food prep, left overs, sheet pan meals, bbq, pizza night, breakfast for dinner and now parchment paper meals should be part of every parents arsenal of meal options!

I now make it at least 3 times a month.  It so easy to prep and even easier to clean up!  I used this Dr. Oz recipe and used the veggies I had on hand.  Still ahh-mazing!

What you need:

– Chicken Breast (I sliced each in half and we had enough for 2 slices per person)
– Garlic
– Butter
– Spinach
– Red Pepper
– Salt & Pepper
– Olive Oil

What you’ll do:

1. Preheat oven to 400°F.

2. Fold the parchment paper (12×18 inches) in half, then open up.

3. Lay a bed of spinach on the open parchment paper.

4. Mix the minced garlic and butter in a small bowl and spoon half of the garlic butter on top of the spinach.

5. Lay the chicken on the spinach, season with salt and pepper.

6. Slice the red pepper and lay the slices on top of the chicken and spoon on the rest of the garlic butter.

 

7. Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.

7. Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F.

8. Remove from paper and server with spagetti or with a salad ….& Enjoy!

Mother’s Day #GiftGuide 2017

Just got off the treadmill after listening to this episode of The Lively Show.  It’s about how motherhood/becoming a mom shouldn’t take away from your career development.

Jess actually talks about how important mothering is and that the shiny penny career focus is a societal pressure.  Instead we (as moms and society) should consider motherhood as chance to expand the universe (whoa) and focus on soul care.  I loved her thoughts on this and personally feel I am doing my best to live those words.

New in #ScrabblePrints

I am probably most creatively inclined these days when it comes to designing new scrabble prints.  I find myself typing quote ideas into the notes app on my phone or into my mini moleskin so I won’t forget.  I wasn’t to happy with some of the backgrounds I had on hand so a few weeks ago the Hubz and I were running some errands and we were close to the Michael’s in our area and decided that I’d run in and get some craft paper/scrapbooking sheets.

In the past I have used images printed off my home printer and just laid the scrabble tiles on top, but I wanted something more crafty.  And so these 2 new prints were born.

This one is me in a nutshell. I can see this print for a creator/maker/etsy store owner who is constantly dreaming up new ideas.  Or even someone who is ambitious and goal oriented.  I love the background and happy with how the post processing turned out.

Just a cute 143 :) When I picked up this sheet at the store I had so many ideas pop into my head but I love you seems like a good place to start.

I plan to add these prints to my Etsy Shop within the next 2 weeks (along with the one in this post).  Hopefully you can check it out and if you like them you can make a purchase.
